Easy lemon and blueberry mug cake

After trying this lemon mug cake last week, I decided there must be a way to make a version with blueberry added in!

I used the same basic recipe to make mine but there were a few tweaks.

The ingredients I used were:

4tbsp of self-raising flour
3 tbsp fat free blueberry yougurt (I used one from ASDA)
2 and a half tbsp of caster sugar
1 tbsp of vegetable oil
1 tbsp lemon juice (I used the stuff you buy in the supermarket, rather than freshly squeezed)

  • Add all ingredients to a microwave-safe mug

  • Mix well making sure all the flour from the bottom of the mug gets combined
  • Microwave - times will vary depending on your microwave. I used trial and error to get the timing right anyway but mine took between 45 seconds and 1 min


The top of the cake doesn't look great, but once you tuck in..



A quick dessert, and as the yogurt is fat-free.. it can't be that bad for you.. can it?

Food post: Choco-mallow-pie

Yesterday I decided I wanted to do some baking. This doesn't happen very much anymore, due to the large amount of washing up it produces, but.. its a long weekend so who cares! Now, the recipe we decided on wasn't actually so much baking as putting together, but it was fun (and tasty) anyway!
The recipe came from a book my Mum bought my fiancé about a year ago, "Essential Student Cookbook" by Cas Clarke. Not really where you'd expect to find this recipe, but I think it was in the "entertaining" section. The recipe is relatively simple, with only 4 ingredients.. cream, chocolate, marshmallows and a pastry base. I guess that is cheating a bit, but even celeb chefs don't seem to make their own pastry anymore! So.. here it is!


It was yummy (I say was.. we still have a fair amount left!) and I would definitely make this again.. although maybe with the help of an electric whisk next time! Let's just say that beating cream 'til it holds its shape is difficult without one..

Food: Cake pops!











Yesterday, we attempted to make cake pops!
The set I have suggests using a cake mix to make the pops.. normally I would mix one up myself.
We fancied the idea of this brownie mix, so that's the one we got.
They actually taste great :)
The majority of them don't look too bad either..

Food post: Surprise birthday cake!


I made this surprise birthday cake for my fiancé Tom yesterday while he was at work. 
I used a Nigella recipe I found on the bbc website that uses olive oil instead of butter/fat 
(because I was running out of butter and didn't really have time to nip out for more!). 
It actually worked quite well, although I should've cooked it a bit longer.
Then I topped it with chocolate philly and some nestlé munchies :)
